I just love one pot meals.
I am officially as domesticated as they come now that I just said that. But seriously though, this recipe is so easy and SO YUMMY!
Hummus Crusted Chicken with Zucchini and Squash
1lb of chicken ( strips or thin fillets)
1.5 lbs Zucchini and squash
Salt and pepper
Store bought hummus
Pre-Heat oven to 450 degrees
Wash veggies and cut unto quarters
Place veggies in glass pan and season with salt/pepper and drizzle with extra virgin olive oil
Season chicken with s/p and garlic powder
Place chicken on top of veggies and coat with Classic hummus
Sprinkle chicken with paprika
cook for 25 min
