Cowboy Caviar is taking over TikTok and if you haven't had it, it's something you need to make IMMEDIATELY. I've been eating cowboy caviar for years and it's like the perfect dip for summer. It's light and fresh and absolutely delicious. It's a go to for gatherings w/ friends too and always a hit at the party.
Here's how you make it:
INGERDIENTS:
- 1 purple onion, diced
- 1 tomato, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeño, chopped
- 1 lime
- 1 can of corn
- 1 can of black-eyed peas
- 1 can of black beans, drained and rinsed
- 1/2 cup of olive oil
- 1/4 cup of apple cider vinegar
- 1 spoonful of sugar
- Dash of garlic powder
- Dash of chili powder
- Dash of cumin
- Dash of Aleppo pepper
- Salt and pepper, to taste
- Avocado (optional)
STEPS:
After cutting everything, in a large bowl mix the corn, black-eyed peas, black beans, onions, tomato & peppers. Pour in the Olive oil, ACV, and lime juice. Mix it all up & top W/ avocado (optional). Enjoy.
I like using avocado instead of black-eyes peas and adding in some feta cheese. *Chefs Kiss*
