I've posted this recipe before but some of you guys were asking for it after I posted the pics on my IG from Easter weekend.
A lot of you guys have been asking me why I don't sell my cakes and start a little side gig. Well full disclosure my cakes are box cakes, but I do make my own buttercream. I also don't work well under pressure when it comes to baking. I tend to overthink and mess up my piping when I know the cake is being eaten by someone outside of my household that isn't obligated to tell me its good.
The cake I used is the betty Crocker Super Moist Carrot Cake Mix. There are all kinds od ways to make your box cake taste more like a bakery cake by adding more eggs or stitching out the oil for something else. I wanna try those methods eventually but mama was on a time crunch this weekend.
I may not be a from scratch type baker but I always make my own buttercream. Its pretty easy once you get the hang of it and it tastes SO DAMN GOOD.
For the Carrot Cake I use THIS cream cheese frosting recipe. But there are so many options on this site that you can do. Marshmallow, chocolate, strawberry...alllllll the buttercream!
