I must admit that with moving and the holidays i have been slacking with cooking for my boys. Been ordering too much expensive takeout, and I've been wanting to break in my new stove for a week so last night I decided to go for it. And by go for it I mean the easiest recipe ever because mama was also tired.
This was my play on a Trader Joe's recipe I found on Pinterest. I didn't have time yesterday to stop there so I improvised. but do actually want to try the Trader Joes one eventually.
Ingredients:
2lbs pre cooked shrimp ( I wanted to have leftovers)
Cilantro Lime Dressing ( I just went to the dressing section and picked one that caught my eye)
Slaw Mix
Avocado
Corn tortillas
Instructions:
S/P the shrimp and heat in a skillet with some avocado oil for around 4-5 minutes
Toss the slaw in the dressing
Heat the tacos n a pan for about 30 seconds
Build your tacos with the slaw, shrimp and avocados.
BOOM! DONE!
